Spinach Cheese Balls

(Serves 6)
2 tsp oil
1 clove garlic, chopped
1 small ginger, chopped
1 onion, finely chopped
1 green chilli
2 cup palak / spinach, roughly chopped
½ cup bread crumbs
2 tbsp corn flour
¼ tsp salt
6 cubes cheese, mozzarella / cheddar
oil for deep frying

  1. In a large kadai, heat 2 tsp of oil and saute garlic, ginger, green chilli and onions.

  2. Now add the palak and saute till the palak shrinks.

  3. Cool down the mixture completely and transfer it to the blender.

  4. Add water as required and blend to smooth paste. Make sure not to add excess of water.

  5. Transfer the palak puree into a large mixing bowl.

  6. Add in the bread crumbs, corn flour and a pinch of salt.

  7. Combine all of these to form a dough. Add more breadcrumbs if the dough is watery.

  8. Now grease your hands with oil and take a ball sized dough. Flatten it by pressing gently.

  9. Place a small cube sized cheese (mozzarella / cheddar) in the center and seal the edges together. The balls shouldn’t have any cracks else cheese will melt and create a mess while baking or frying.

  10. Deep fry these balls in medium hot oil or bake at 180 degree celsius for 15-20 minutes.

  11. Stir occasionally without cracking the cheeseballs until they turn crisp.

  12. Finally, serve palak cheese balls / spinach cheese balls with tomato sauce.
