Under 15 Minutes: 5 Easy Recipes for Busy Moms

Earlier it was easy for new moms to manage household work with kids, but nowadays, mothers do not just limit themselves to the four walls of the house. Today’s mothers are supermoms, they go out to work, take care of their family and at the same time manage household chores. These days, work commitments could be a little too demanding; to manage them with cooking, cleaning, taking care of finances, is an almost impossible task. Despite everything, you don’t believe in hiring a house help and want to be the sole caretaker and caregiver to your little abode of happiness. Cooking is a time-consuming activity and at times you may require some tricks in your pockets to whip up a quick recipe. Take a look at these 5 easy recipes:

1. Fruit And Yogurt Parfaits

Mix some lime juice and honey in a large bowl, stir in pineapple and blueberries. Keep this mixture aside and bring out your cute little glasses from the kitchen. Fill each glass up to their 1/3rd capacity with yoghurt (the flavour could be the same or different, depending upon your preferences), add the earlier mixture of pineapple and blueberries to each glass and top it up with a little granola and pomegranate seeds. Cover and serve chilled.

2. Shrimp, Leek And Spinach Pasta

Cook any normal pasta by following package instructions. Now add butter and leek in a pan and cook until the leek softens. After a while, add shrimps and lemon zest. Cook and toss from time to time to ensure that the flavours seep in. Now add a tablespoon of cream to the mixture and toss in your already cooked pasta. Sprinkle spinach on top. Your pasta is ready to serve.

3. Maggi And Cheese Wrap

This would probably become your kid’s favourite recipe. Cook Maggi and add vegetables to make it more nutritious. Deposit this on a roti (preferably multigrain), grate the cheese and roll it up to serve your kids. This could also be a great lunch box recipe, but remember that it is okay only once in awhile, although you can keep innovating to replace the noodles with something healthier.

4. Peanut Butter, Marshmallow And Banana Sandwich

Spread peanut butter on two slices of bread (brown or white, according to your preference), add banana slices and small marshmallow cubes between these slices. Add some butter to a pan and grill this slider from both sides till it becomes golden brown in colour. You can also serve this with a glass of milk or fruit juice.

5. Quick Brown Bag Burritos

Rinse beans with cold water and wait till the water drains away. Add beans, salsa, cumin, and chilli to a large pan. Mash the beans with the spoon and cook on medium to high heat. Add water if the mixture becomes too dry and stir well. Fill this mixture with tortillas (which you can buy at any supermarket) and top them with grated cheese. You can also add a few pieces of baked/boiled corn. Fold the tortilla and make sure that the ends are tucked in to prevent spilling.
