The Easiest And Healthiest Chickpea Salad Recipe

It is rich in proteins, fibres, iron, vitamins, minerals and it gives you the energy to deal with your stressful days.

Here’s how you can make chickpea salad at home:

For the salad:

-1 cup of chickpeas, rinsed boiled and drained

-1 red bell pepper, chopped-1 green bell pepper, chopped

-1/2 small red onion, chopped

-2 tomatoes, halved (about 1 cup)

-1 medium cucumber, sliced and quartered

-1 yellow bell pepper, chopped

-4 oz feta cheese, crumbled or cut into 1/2 inch cubes

For the dressing:

-1 teaspoon dried oregano

-freshly ground salt and pepper, to taste

-1 tbsp olive oil

-2 tbsp freshly squeezed lemon juice

-2 cloves garlic, minced


-Put all the salad ingredients into a large bowl and toss them together.

-In a small bowl, whisk together olive oil, lemon juice, garlic and oregano.

-Pour this dressing onto the salad and toss it thoroughly again. Taste the salad and add salt and pepper as per your taste.

-Your salad is ready to be served immediately!
