- 3 cups of diced fresh pineapple
- ½ a cup of tomato salsa (medium or hot)
- 1/4th cup of diced Vidalia onions
- 1 sliced scallion
- juice of 1/2 a lime

- 1 bag baked tortilla chips for serving with the salsa.
Combine all the salsa ingredients mentioned above in the given proportions in a large bowl in the following order - pineapple, tomato salsa, Vidalia onions, lime juice and fresh mint leaves.
