Pregnancy Cravings Alternative- Fresh Pineapple Salsa

Ingredients – 

- 3 cups of diced fresh pineapple

- ½ a cup of tomato salsa (medium or hot)

- 1/4th cup of diced Vidalia onions

- 1 sliced scallion

- juice of 1/2 a lime

- 1 tablespoon of sliced fresh mint leaves

- 1 bag baked tortilla chips for serving with the salsa.

Recipe – 

Combine all the salsa ingredients mentioned above in the given proportions in a large bowl in the following order - pineapple, tomato salsa, Vidalia onions, lime juice and fresh mint leaves. Serve with baked tortilla chips. Make sure that all the ingredients are properly sliced (although not finely) before mixing them. This is to ensure that every item fully contributes to the ultimate flavour of the dish. Salsa can be refrigerated for one day. You can also make other fruit salsas instead of a pineapple one. Incorporating other seasonal fruits in your salsa will not only give you a taste of vivid flavours but also ensure that you intake proper nutrients as per the season’s availability. This is an easy recipe which serves about 5 people and takes all of 10 minutes to prepare. What is more, you can have it as a side dish with your lunch or dinner.
