- 7 ounces of almond paste
- 3 tablespoons granulated sugar
- 3 tablespoons confectioners’ sugar
- Finely grated lemon zest (one lemon)
- 1/4th tablespoon vanilla extract
- A pinch of salt
- 1 egg white
- 3 tablespoons cherry jam.
Add almond paste, the sugars, lemon zest, vanilla extract and salt (as per taste) in a food processor. Blend it until it’s well combined. Pulse in the egg white and beat the mixture properly. Meanwhile, preheat the oven to 350 degrees and line it up with a large baking sheet with a parchment paper (also known as cookie paper). Your cookie dough is ready. Now, scoop 1/4th tablespoon of this dough onto the cookie sheet and make flat cookies (preferably bite-sized cookies), leaving sufficient space in between. Bake for ten to twelve minutes till it becomes golden. Cool on the pan. Once cool, sandwich the cherry jam between two cookies and serve. You can also store these cookies for later use in an airtight container at room temperature for up to three days. Also, you can use any other flavour of jam you that like (apple, strawberry, orange, mixed fruit, etc) or even Nutella if you wish. Serve these cookies with a glass of wholesome milk.
