All the current research points that eggs are best to shed weight easily. However, we do not recommend an egg only diet, a category under fad diet, where you lose weight but with consequences. This recipe is healthy, low in fat and high in protein, one of the best combinations for a healthy weight.

Things you'll need
- 6 eggs
- 2 teaspoons of coriander seeds
- 3 to 4 red chillies (you can opt for more if you can withstand spice)
- Mix of green cardamom, pepper corn, cloves, cinnamon stick, and cumin. (about 20 grams of all of it)
- Grated coconut
- Pinch of turmeric powder
- Curry leaves
- Mustard seeds
- Chopped onions
- 1 tablespoon ginger garlic past
- 1 cup Tomato puree made of 3 tomatoes
- Chopped coriander leaves
How To Make The Yummmyyy Coconut Egg Curry
Boil the eggs in water for about 15 mins until they are completely cooked. Remove the shells and set aside.
Prepare the Masala
Roast and Grind coriander seeds, red chillies, green cardamom, pepper corn, cloves, cinnamon stick, cumin, grated coconut, pinch of turmeric powder. Add required water to make a thick paste of this masala.
Put It Together
Choose the healthiest oil available. Preferably coconut oil or olive oil with another carrier oil of your choice. Fry the onions until golden brown. Add mustard seeds and curry leaves and sauté for few mins. Add tomato puree and stir till the water evaporates. add some ginger garlic paste for better taste. Add the prepared masala to this cooked mixture and stir on low flame for about 10 minutes. Add salt for taste. Cut the boiled eggs into halves and place it carefully on the cooking masala. Stir carefully keeping the eggs intact. Garnish with coriander leaves.
