The eating habits children inculcate during their childhood will help them establish a healthy lifestyle lifelong. As a parent, you play a major role in shaping your children’s eating habit. Generally, parents compel the children to have healthy food whereas children demand tasty food. So, here are 6 after-school snack recipes to strike balance between healthy and tasty:
1. Corn Toast Recipe with Moong sprouts and vegetables:
Preparation: 10 mins; Cooking: 5 mins
Mix wheat flour, corn flour and milk in a small bowl. Heat a small skillet and add butter, corn, the vegetables, moong sprouts and the flour milk mixture. Add pepper and salt as per your taste. Stir the mixture till it is thickened and the corn flour appears to be cooked. Meanwhile, toast the bread slices and keep it ready by applying butter over it. Once the mixture is ready, apply it on the bread slices and serve immediately.
2. Sural Appam:
Preparation: 5 mins; Cooking: 10 mins
For stuffing, mix grated coconut, sugar and cardamom powder in a mixing bowl.
For Appam, to all purpose flour, add sugar and a pinch of salt and mix together to make a batter. The consistency should be thinner than dosa batter consistency. Pour a ladle full of batter on a heated griddle and spread it into thin dosa. Cook it and remove from pan before it starts to turn brown. To this prepared pancake, add the coconut stuffing and spread all over the surface and roll it from one end to the other.
3. Biscuit Roti Recipe:
Preparation: 25 mins; Cooking: 30 mins
For outside layer, Add wheat flour, hot oil, salt and a little water and prepare a firm dough.
For the filling, Heat a Kadai with oil and splutter the mustard seeds, urad dal and curry leaves. Then add all the spice powders (Cumin powder, Coriander powder, sambhar powder, red chili powder, turmeric powder) along with semolina and mix well.
To make rotis, take a small sized dough and roll it out by dusting some flour. Stuff the dough with filling and seal it. Dust some more flour and flatten it. In hot oil Kadai, fry these roti till it is golden brown.
4. Corn flakes chat recipe:
Preparation: 5 mins
In a large bowl, add cornflakes, chopped tomato, chopped green chillies, chilli powder and pepper powder (as per your child’s taste), chopped or mashed date (optional), finely chopped onions, chat masala or amchur powder and salt as needed, finely chopped coriander. Mash everything to release the moisture. Serve immediately. Sprinkle some lemon juice if needed.
5. Scrambled egg sandwich:
Preparation: 2 mins; Cook time: 8 mins
Toast the bread and keep aside when they are crunchy. In the same tawa, add olive oil, and cumin. Let it splutter. Add green chillies and grated ginger. Fry till the ginger smells good and perfect. Pour the eggs on tawa and scramble it gently. Once the eggs are soft cooked, Add salt, chili powder, garam masala or pepper powder and mix well. Put it on the toast and add whatever vegetables you prefer and cover it with another slice of bread. The savoury scrambled egg sandwich is ready.
6. Mixed Vegetable Lollipop:
Preparation: 20 mins; Cook time: 25 mins
In a saucepan, add oil and heat it. Add diced carrot, diced cabbage, chopped onion and sauté it. After the vegetables are properly cooked, add red chilli powder, coriander powder, turmeric powder, garam masala powder and toss it. Season it with pepper and salt. Cook for 2-3 minutes by closing the lid. Add these sautéed and seasoned vegetables to the boiled potatoes and mash it using a masher and make it a paste. In a paniyaram pan, add oil and place lemon sized mixture into each hole and cook it by flipping it every now and then. Cook till it is golden brown in colour and yummy and spicy mixed vegetable lollipop is ready.
