5 Insanely Simple Indian Recipes For Busy Moms

Women’s lifestyle today is very different from what it was a few decades ago. Today, women give equal importance to office work as they do to household chores. After having a baby, it is a matter of time before mothers rejoin their offices and go back to work.

Most women usually hire house help to help them with household chores such as cooking, cleaning and washing. Some mothers like to cook on their own but at times work may take a toll and cooking after coming back home might be that last thing moms would want to do.

Here are a few simple Indian recipes that you can conjure within minutes:

1. Cheesy Chicken Broccoli Casserole

Ingredients – chicken, broccoli, cheese and mayonnaise, salt, croutons (butter and garlic flavoured).

Recipe – Cook the chicken in boiling water and heat the broccoli in the oven at 350F according to the package instructions. Take a bowl, combine mayonnaise, 1 cup of the cheese and the salt, stir in the cooked broccoli. Now add the cooked chicken pieces to this mixture and mix it well. Add the remaining cheese and bake for 15 to 20 minutes.

2. Mint-Cucumber Raita

Ingredients – yoghurt, cumin powder, cucumber, mint leaves, red chilli powder, salt and sugar.

Recipe – Chop up the mint leaves into fine pieces and grate the cucumbers. Press the cucumber in a clean towel to prevent the raita from becoming too runny. Mix all ingredients in a bowl according to your taste preferences, chill and serve.

3. Bhajias

Ingredients – cauliflower or potato, red chilli powder, salt, gram flour, asafetida, oil.

Recipe – Mix the gram flour with all the spices and add a little water to the mixture to make a thick batter. Cut cauliflower or potatoes into bite-sized pieces and add it to this mixture so as to coat them thoroughly. Preheat oil and deep fry these coated pieces till they become golden brown. Remove onto a tissue to get rid of excess oil and serve with tomato ketchup.

4. South Indian Lemon Rice

Ingredients – coriander and mustard seeds, oil, curry leaves, green chillies, ginger, peanuts, turmeric powder, lemon juice, cooked basmati rice.

Recipe – gently roast and grind the coriander seeds into a powder, and set aside. In another pan, add oil, mustard seeds, green chillies and curry leaves. Fry the mixture till it stops spluttering. Add ginger and peanuts to this (peanuts should be preferably roasted and unsalted). Add turmeric powder, mix and turn off the burner. Add lemon juice, coriander powder, the cooked basmati rice and salt for taste. Mix thoroughly and serve.

5. Brussels Sprouts Hash

Ingredients – soybean, shallots, Brussels sprouts, vinegar, oil, eggs, salt and pepper.

Recipe – add some oil in a pan and cook the soybeans till they become golden brown (you can also use paneer as a substitute). Add oil, salt and pepper to another pan and cook for a few minutes. Add Brussels sprouts and vinegar, cook, until the sprouts become brownish in colour. Add soybeans to this mixture and leave the mixture to simmer in a pan. Break and add eggs to this mixture (sunny side up) and sprinkle them with salt and pepper.
