What is a celiac disease?
Celiac disease is a disorder that causes the body to react to a food protein called gluten. It is a disorder of the body’s immune system. The immune system attacks and destroys body tissue. If children with celiac disease eat foods that contain gluten, the body’s immune system injures the lining of the small intestine. Ingesting gluten may or may not cause symptoms, but it always causes intestinal injury.
